Job Description

We are seeking an experienced and detail-oriented Cost Controller to manage the resort’s cost control activities and ensure timely, accurate financial reporting in accordance with CCR standards, policies and procedures.

Key Responsibilities

  • Prepare the monthly Food & Beverage Cost Control Report, detailing actual costs against budget.
  • Prepare inventory results and investigate and explain any discrepancies.
  • Reconcile food, beverage, diesel and Gift Shop costs.
  • Conduct monthly physical inventories and prepare outlet inventory results, including required adjustments for management discounts, food transfers, spoilage and other variances.
  • Prepare detailed monthly menu analysis based on recipe costings.
  • Prepare the Daily Food Cost Report.
  • Ensure daily inventory records for the Staff Shop are maintained accurately.
  • Conduct regular spot checks across F&B outlets, Gift Shop, Staff Shop and other relevant areas.
  • Monitor par stock levels and ensure POS/PMS inventory information is accurate and updated.
  • Liaise with Purchasing regarding supply, pricing and cost-related issues.
  • Maintain accurate cost control records and supporting documentation.
  • Assist in identifying cost variances and recommend appropriate corrective action.
  • Ensure all reports and statements are prepared accurately and within required deadlines.
  • Maintain high standards of integrity and comply with CCR financial policies, procedures and Code of Ethics.
  • Perform other related duties as assigned by the Financial Controller or Management.

Qualifications & Experience

  • Minimum Bachelor’s Degree in Accounting, preferably with a specialization in Hotel Accounting.
  • Minimum 5 years’ hands-on experience in F&B cost control operations.
  • Strong practical knowledge of hotel accounting and cost control procedures.
  • Good working knowledge of computerized Property Management Systems and Point of Sale systems.
  • Strong numerical and analytical skills with the ability to perform complex calculations accurately.
  • Good knowledge of inventory control, stock reconciliation and cost analysis.
  • Ability to identify, investigate and explain financial and inventory discrepancies.
  • Strong attention to detail and accuracy.
  • Ability to read, analyze and interpret financial and operational documents.
  • Good written and spoken English.
  • Good computer skills with the ability to accurately input and maintain financial information.
  • Ability to work effectively with internal and external stakeholders using patience, tact and professionalism.
  • Health and Safety certification is preferred.
