About the Role

Safari Island Resort Maldives is seeking a talented, organized, and passionate Sous Chef to support the Executive Chef in managing daily kitchen operations. The ideal candidate will ensure high culinary standards, efficient kitchen workflow, and consistent food quality while maintaining hygiene, safety, and cost control.

Key Responsibilities

  • Assist the Executive Chef in planning, organizing, and supervising all kitchen operations.
  • Ensure consistent quality, presentation, and taste of all food items.
  • Supervise kitchen staff, provide training, and maintain discipline and teamwork.
  • Monitor food preparation, portion control, and waste reduction.
  • Ensure strict compliance with food safety, hygiene (HACCP), and sanitation standards.
  • Assist with menu planning, recipe development, and costing.
  • Control food costs, stock levels, and ordering procedures.
  • Ensure proper storage, labeling, and rotation of food items (FIFO).
  • Coordinate with other departments to meet operational and guest requirements.
  • Step in for the Executive Chef in their absence when required.

Requirements

  • Minimum 3–5 years’ experience in a similar role in a hotel or resort environment.
  • Strong culinary skills with experience in international cuisine (Maldives resort experience is an advantage).
  • Proven leadership and team management skills.
  • Knowledge of HACCP, food safety, and hygiene standards.
  • Ability to work under pressure in a fast-paced kitchen environment.
  • Strong organizational and time management skills.
  • Flexibility to work shifts, weekends, and holidays.
  • Professional attitude with a passion for culinary excellence.
