Job Description

Role Overview:

  • To provide leadership, direction and creativity in menu design and food production to ensure the culinary operation achieves its goals and contributes to the guest experience and overall profitability of the resort whilst maintaining brand standards.
  • Ensure all tasks in the culinary operation’s POP (Pre Opening Plan) are completed to ensure a successful opening according to Brand Standards.
  • Ensure that HACAAP and other local regulations are adhered to ensure the highest food hygiene standards.
  • Liaise with the following departments - Purchasing, Stewarding, Engineering, and Outlet Managers accordingly for any operational concerns regarding Culinary.
  • Ensure confidentiality and secure storage of all intellectual property and data bases, both hard copy and electronic. Adhere to Accor Internet and Email policy.
  • Carries out additional tasks from time to time, by request of senior team members which may not be directly related to the job role but necessary for smooth operation of the resort.

Specific Requirements:

  • Pre-opening experience in culinary operations.
  • Recent experience in an Executive Chef role in a luxury resort.
  • Proven creativity and innovation in menu design and food concepts
  • Creating personalized culinary experiences
  • Proficiency in spoken and written business English.
  • Ability to work in remote location.
  • Internationally approved Food Safety Certificate (HACAAP preferred)
